Start with the recipe, not just the colour.

Two products can look similar and behave differently in a dessert. In this collection, Royal couverture and Classic or Delight compound tablets are identified separately, so you can make an informed choice.

Royal couverture

PMC’s Royal ingredient lists include cocoa butter. The dark and milk recipes also list cocoa mass; the white recipe lists cocoa butter and milk powder. For moulding or coating, follow the specific product’s tempering and handling guidance rather than a single method for the whole range.

Classic & Delight compounds

These tablets list vegetable fat in their recipes and are presented as compounds, not couverture. Explore them for the applications described on their product pages. Do not assume that replacing couverture with a compound will give the same result in an existing recipe.

Compare the tablets

What does the cocoa percentage tell you?

The percentage describes the cocoa-derived share of a chocolate, including cocoa butter. It is not a score for quality or a complete description of flavour. Two dark chocolates with the same percentage can have different recipes and characters.

The Royal tablet listings include 70% and 55% dark, 34% milk and 30% white. Compare the full ingredient lists and intended use alongside these figures. A cocoa percentage does not establish sugar content, allergen suitability or a product’s exact behaviour in your recipe.

Tablets

A familiar format for the kitchen. Compare the chocolate type and cocoa percentage before choosing an individual tablet; the wrapper design alone does not tell you which recipe is inside.

Chips & callets

Smaller pieces offer another way to work with chocolate. The catalogue distinguishes chips from callets, with separate product codes and pack sizes. Check the individual usage guidance rather than assuming every small piece is designed to keep its shape during baking.

Spreads

Explore a spoonful with bread or pastries, or an idea for a dessert. Chocolate hazelnut, creamy hazelnut and Star are distinct recipes; Cookies and Biscotty are separate ranges too. Choose by the product details, not by the colour of the jar.

Begin with what matters to you.

For home baking, start with your recipe and compare the suggested uses. For professional work, ask PMC for the current specification and handling guidance before testing a product in production. For retail or distribution, include your country, product code and preferred pack size in your enquiry.

Every product page brings together the available ingredients, allergen information, listed size and source details. Some source figures remain incomplete or disputed; the notices on those pages are important. Always check the actual label and request current information where needed.

This guide offers general orientation and serving inspiration—not tested recipes, dietary advice or additional product specifications. Packaging images remain design concepts.
